How We Got Here

Our Story

We didn’t buy a food truck. We had one built.

It started with a picture in Jess’s head: a polished American Airstream, parked up, smoke coming off the grill, a queue down the side of it.

The problem was the price tag. A genuine Airstream conversion costs what a small house deposit costs — and every quote that came back was for the badge as much as the trailer. For a business that hadn’t served its first burger yet, the numbers simply never worked.

So Jess stopped shopping and started designing. If nobody would build the right trailer at the right price, the answer was to go straight to the people who actually make them — a fabrication workshop in China, working from our own drawings, to our own kitchen layout.

No middleman. No badge. Just the trailer we wanted, built from scratch, for a fraction of the price. Here’s how it came together.

From Drawing to Pitch

The Build

    The Drawings

    Before a single piece of steel was cut, the whole thing existed as a drawing — every fridge, every work surface, every inch of the run.

    The grill here, the fryer there, the salad bench where it needed to be for service. Get this wrong and you spend the next ten years reaching across yourself on a Saturday night.

    Bare Bones

    Then the frame. Twin axles, a flat bed, and that unmistakable curved profile taking shape rib by rib.

    Every joint welded by hand. You can see the sparks in the background — this is a workshop, not a production line.

    The Shell

    Panel by panel, the stainless steel went on — still wearing its protective film, still covered in the marks of the people fitting it.

    This is the stage where it stopped being a trailer and started looking like the thing Jess had pictured.

    The Kitchen

    Inside, the drawing became real. Extraction hood, grill, fryer, cold benches — all wrapped, all bolted down, all exactly where the plan said they should be.

    Non-slip floor. Stainless everywhere. Built to be scrubbed down at the end of a long day.

    Mirror Finish

    Then the film came off, and the polishing started. Chrome lights, riveted seams, a back end you can see yourself in.

    That reflection is the workshop it was built in — thousands of miles from Castlepoint.

    Finished

    One Airstream-style trailer, built to spec, for a fraction of what the badge would have cost.

    Then the small matter of getting it halfway around the world and onto a pitch in Bournemouth.

The Full Build

The first panels go on. Everything still wearing its blue protective film.

And Then We Cooked

The trailer was only ever the container. What goes out of the window is the point: no shortcuts, no frozen patties, no microwaved sauces. Real ingredients, cooked fresh, served straight off the truck.

The brisket is the labour of love that started it all — rubbed and left overnight, then twelve hours on low-and-slow smoke until that black bark forms. It takes all day. It’s worth every minute.

We’re not a chain. We’re a truck — one we drew ourselves. And that’s exactly how we like it.
